  • 1 ½ cup granulated sugar (300 grams)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened cocoa powder (65 grams)
  • 1 cup all-purpose flour (120 grams)
  • Pinch of salt
  • ½ cup sweetened shredded coconut (42 grams)

For nest assembly:

  • 1 cup sweetened shredded coconut (85 grams)
  • 2 tablespoons butter
  • ½ cup semi-sweet chocolate chips (85 grams)
  • milk chocolate candy eggs , for decoration

Instructions

 

To make the brownie bites:

  • Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan with butter or a nonstick cooking spray, ensuring each cup is well-coated to prevent sticking.
  • In a large mixing bowl, thoroughly combine the melted and cooled butter with the granulated sugar until smooth. Incorporate the eggs one at a time, mixing well after each addition to ensure they are fully integrated into the batter. Stir in the vanilla extract. In a separate, medium-sized bowl, whisk together the unsweetened cocoa powder, all-purpose flour, and a pinch of salt. Add this dry mixture to the wet ingredients all at once and mix gently until just combined, being careful not to overmix; stop as soon as no streaks of dry ingredients remain. Finally, fold in the sweetened shredded coconut.
  • Scoop the brownie batter into the prepared mini muffin pan, filling each cup nearly all the way to the top. Allow them to cool in the pan for 5 minutes before carefully transferring them to a wire rack to cool completely.

To assemble the nests:

  • Spread the additional 1 cup of sweetened shredded coconut evenly onto a large sheet pan.   • Prepare a double boiler by setting a heat-proof bowl over a pot of simmering water (ensure the bowl doesn’t touch the water). Melt the 2 tablespoons of butter and ½ cup of semi-sweet chocolate chips in this bowl, stirring continuously until the mixture is smooth and fully melted. Remove the bowl from the heat.
  • Once the brownie bites are completely cool, dip the tops of each brownie into the melted chocolate mixture, allowing any excess to drip off. Immediately return the chocolate-dipped brownie bites to the wire rack. While the chocolate is still wet, generously cover each top with the toasted coconut, pressing gently to adhere. Finally, garnish each “nest” with a few milk chocolate candy eggs to complete the festive look. Serve and enjoy!
