  • 3 cups mix of blueberries, blackberries and raspberries (375 grams)
  • 2 tablespoons granulated sugar (25 grams)
  • 2 tablespoons olive oil
  • Pinch of salt
  • 2 teaspoons vanilla extract

To make the panna cotta:

  • In a medium saucepan, gently sprinkle the unflavored gelatin over ½ cup of the whole milk. Allow it to sit undisturbed for approximately 3 minutes to properly soften, or “bloom.” This crucial step ensures a smooth texture without lumps.
  • Place the saucepan over medium heat. Add the remaining whole milk, granulated sugar, and the split vanilla bean. Heat the mixture, stirring frequently, until the gelatin has completely melted and the sugar has fully dissolved. It is very important not to let the mixture come to a boil, as this can destroy the gelatin’s setting properties.
  • Remove the saucepan from the heat. Stir in the heavy cream and vanilla extract until well combined. Carefully remove the vanilla bean pod from the mixture. Pour the panna cotta mixture evenly into 4 half-pint jars or individual ramekins. Cover each with plastic wrap to prevent a skin from forming and refrigerate until fully firm, which typically takes about 6 hours or overnight.

To make the roasted berries:
