  • Cook bacon on the stove top or on a sheet pan in a 375°F oven until crispy, about 10-15 minutes. Transfer to a paper towel-lined plate to drain, then roughly chop.
  • In a small bowl, whisk the sour cream, mayonnaise, basil, dill, parsley, and salt and pepper until well combined and smooth.

Fresh herbs will always give you the best flavor and aroma, and I prefer to use all 3 (dill, parsley, and basil) for a well-rounded taste. If you don’t have one of the fresh herbs, simply leave it out or double up with what you do have on hand.
  • To make ahead: This salad is best when combined the day you plan to serve it to maintain the crispness of the peas and bacon. However, all of the individual components can be prepped ahead of time: bake the bacon until crispy, chop the cheddar cheese into cubes, trim and chop the sugar snap peas, and whisk together the creamy herb dressing. Store each component separately in airtight containers in the fridge for up to 3 days, and then assemble the salad when you’re ready to serve.
