Essential Ingredients for Your Perfect Pie
Creating a truly exceptional pie begins with selecting high-quality ingredients. For our Chocolate Banana Cream Pie, each component plays a crucial role in achieving that perfect balance of flavor and texture. From the butter in your crust to the chocolate in your ganache, quality truly shines through. Fresh, ripe (but not overripe) bananas are key for their natural sweetness and soft texture, while whole milk ensures a rich and creamy pudding. Don’t skimp on good quality chocolate for the ganache – it makes all the difference! The ingredient list below details everything you’ll need to bring this incredible dessert to life.

How to Craft Your Chocolate Banana Cream Pie
Making this impressive Chocolate Banana Cream Pie is a rewarding process that involves a few key stages. Each step is designed to build layers of flavor and texture, culminating in a dessert that’s as beautiful to look at as it is delicious to eat. We’ll start with the foundation – a perfectly blind-baked pie crust – and then move on to crafting the creamy fillings and assembling our masterpiece. Follow these detailed instructions, and you’ll be enjoying a slice of heaven in no time.

- Prepare your homemade pie crust: Begin by combining cold, cubed butter with your dry ingredients until it resembles coarse crumbs with pea-sized butter pieces. This is crucial for flakiness. Gradually add ice-cold water, mixing just until the dough comes together without overworking it. Form it into a disk, wrap it, and chill it for at least 2 hours. This chilling time is essential for developing flavor and preventing shrinkage during baking.
- Blind bake the crust to perfection: Since the delectable cream filling isn’t baked in the oven, your pie crust must be fully baked beforehand. This process is known as a blind bake. For a detailed, step-by-step guide to achieving a perfectly golden and crisp crust every time, check out my full tutorial post on how to do it right.
- Craft the creamy vanilla pudding: While your crust is baking and cooling, you can start on the heart of the pie – the vanilla pudding. Gently heat milk and sugar in a saucepan until it’s steaming, being careful not to boil. In a separate bowl, whisk together egg yolks and cornstarch until smooth. Slowly temper the hot milk mixture into the egg mixture to prevent the eggs from scrambling. Return this mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens into a rich, velvety custard. Remove from heat and stir in the vanilla extract and butter for added richness and flavor. Allow it to cool completely to room temperature.
- Whip up the luscious chocolate ganache: For the irresistible chocolate layer, heat heavy cream until it’s steaming, then pour it over your chosen chocolate (bittersweet or semi-sweet works best for balance). Let it sit for a few minutes to allow the chocolate to melt, then whisk until it transforms into a smooth, glossy ganache. Ensure it also cools to room temperature before assembling, so it doesn’t melt the other layers.
- Assemble your decadent pie: Once your pie crust, vanilla pudding, and chocolate ganache have all cooled to room temperature, it’s time for the fun part – assembly! Start by spreading the cooled chocolate ganache evenly over the bottom of your blind-baked pie crust. Next, arrange a generous layer of freshly sliced bananas over the ganache. Finally, carefully spread the vanilla pudding evenly over the bananas, ensuring they are fully covered. For the grand finale, top with a generous dollop of freshly whipped cream and, if desired, a sprinkle of chocolate shavings or a few extra banana slices for garnish.
- Chill and serve for optimal enjoyment: Patience is a virtue, especially when it comes to pie. This chocolate banana cream pie must be thoroughly chilled before serving to allow all the layers to firm up properly, ensuring clean, beautiful slices. Store it in the fridge for at least a few hours, or ideally, overnight. While it keeps well for up to a few days, this pie is truly at its best 1-2 days after assembly, allowing the flavors to meld perfectly.

Expert Tips for Pie Perfection
Achieving a picture-perfect and incredibly delicious Chocolate Banana Cream Pie is easier with a few expert tips. These insights will help you navigate the process, ensure the best results, and even offer some creative flexibility.
- Mastering the Crust: A truly flaky pie crust is the backbone of this dessert. If you’re new to pie making or just want to perfect your technique, be sure to check out my foolproof flaky pie crust method. It guarantees those desirable flaky layers and incredible flavor that elevates this pie.
- Flawless Blind Baking: To avoid a soggy bottom and ensure your crust holds its shape, follow all my advice for how to blind bake a pie crust. Proper preparation, including chilling the dough and using pie weights, is key to preventing shrinkage.
- Silky Smooth Pudding: Straining the vanilla pudding after cooking is an optional but highly recommended step. It will catch any minuscule lumps of cornstarch or scrambled egg, resulting in an exceptionally silky, smooth, and luxurious filling that truly melts in your mouth.
- Patience is a Virtue (Especially for Chilling!): While the aroma of your freshly assembled pie might be incredibly tempting, resist the urge to cut into it immediately. The pie absolutely needs to be chilled for at least 2-4 hours (preferably longer) to allow all the layers to set properly. Cutting the pie too soon will result in soft, messy, and less appealing slices.
- Garnish with Flair: Feel free to get creative with your garnishes! I often use rough chopped chocolate for a rustic look and extra chocolatey crunch. You could also add a layer of freshly sliced bananas on top right before serving for a beautiful presentation and an extra burst of fresh banana flavor. A dusting of cocoa powder or a drizzle of caramel would also be delicious.
- Make Ahead Magic: Many components of this Chocolate Banana Cream Pie can be prepared in advance, making assembly a breeze on the day you plan to serve. The vanilla pudding can be made and stored in an airtight container in the fridge for several days. Pie dough can be refrigerated for up to 5 days or frozen (double-wrapped) for a month or more. Your baked pie crust can also be stored at room temperature for a few days. However, for the freshest taste and best texture, I highly recommend preparing the chocolate ganache and whipping the cream just before you are ready to assemble the pie.
- Choosing the Right Bananas: Select bananas that are ripe but still firm. Overripe bananas can become too mushy and release too much moisture, potentially affecting the pie’s texture.
- Preventing Banana Browning: To keep your sliced bananas looking fresh, you can toss them gently in a little lemon juice or a fruit fresh solution before layering them. This simple trick helps prevent oxidation and keeps them visually appealing.

- ¼ cup (56 grams) cold water
For the vanilla pudding:
- 2 cups (450 grams) whole milk
- ½ cup (100 grams) granulated sugar
- 3 large egg yolks
- 3 tablespoons cornstarch
- 1 ½ teaspoon vanilla extract
- 2 tablespoons unsalted butter
For the chocolate ganache:
- 4 oz (113 grams) bittersweet or semi-sweet chocolate , chopped or use chips
- ½ cup (113 grams) heavy whipping cream
For assembly:
- 1 banana , sliced
- 1 cup (227 grams) heavy whipping cream
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
- Additional chopped chocolate or sliced bananas , for topping (optional)
Instructions
To make the pie crust:
-
Combine the flour, sugar, and salt in a bowl. Add the cubed butter and toss to coat. Use a pastry blender or two knives to cut the butter into the dry ingredients until butter is the size of peas. Add cold water and use a spatula and then your hands to stir the mixture until it comes together into a ball. If mixture is too dry, add additional water a teaspoon at a time.
-
Flatten into a disk and wrap in plastic wrap and chill in the fridge for at least 1 hour and up to 5 days. Dough can also be frozen (double-wrapped) for up to 2 months.
-
When ready to roll out, let the dough rest at room temperature for five minutes. On a lightly floured surface, use a rolling pin to roll out the dough into a rough 13-inch circle. Dough should be about ¼-inch thick. Transfer dough to 9-inch pie dish and fold and crimp edges as desired.
-
Freeze pie crust for 30 minutes. Preheat oven to 425°F.
-
Line frozen pie crust with greased foil or parchment paper, then fill all the way to the top with pie weights to hold crust in place during baking. You can also use dry beans or rice.
-
Bake pie crust for 20-25 minutes until edges are golden brown. Lift liner and pie weights out of crust and set aside to cool. Bake pie crust for an additional 5-10 minutes until all of pie crust is baked and lightly browned.
To make the vanilla pudding:
-
Heat the milk and sugar in a medium saucepan over medium heat. Meanwhile, whisk together the egg yolks and cornstarch in a separate bowl. When the milk starts to bubble at the edges and steam, remove from heat and add in a slow steady stream to the egg mixture.
-
Pour the mixture back into the saucepan and cook over medium heat, whisking constantly. When the custard is thick, remove from heat and add the vanilla and butter. Stir until smooth.
-
(Optional) Pass pudding through a mesh strainer to remove any lumps.
-
Set pudding aside to cool to room temperature, stirring occasionally.
To make the ganache:
-
Heat the heavy whipping cream in microwave until steaming. Pour over the chocolate in a medium bowl and let sit for 5 minutes. Stir until smooth.
To assemble the pie:
-
Beat heavy whipping cream till it starts to thicken, then add vanilla and sugar. Beat to medium peaks.
-
Spread chocolate ganache over the bottom of the pie crust. Slice the bananas and arrange in a layer over the chocolate. Dollop the vanilla pudding over the bananas and spread to cover in an even layer. Top with sweetened whipped cream.
-
Chill for at least 2 hours before serving. Add toppings like chopped chocolate or bananas, if desired, before slicing.
