Instructions

  1. Combine the sliced strawberries with 1 tablespoon of the granulated sugar and let sit for 5 minutes. This step, known as macerating, helps the strawberries release their juices and enhances their natural sweetness. Once macerated, gently combine the sugared strawberries with the plain whole-fat yogurt. Spoon this delicious mixture evenly into 4 individual ramekins and use the back of a spoon to smooth the tops for an even surface.
  2. Just before serving, sprinkle the remaining granulated sugar evenly over the top of each ramekin. Using a kitchen torch, carefully caramelize the sugar until it forms a beautiful, golden-brown, crispy crust. Be sure to move the flame constantly to prevent burning and achieve an even caramelization. Serve immediately to enjoy the satisfying contrast between the warm, crunchy topping and the cool, creamy yogurt and fruit beneath.

Notes

Important Tip for Caramelization: For the best results, it’s highly recommended to work quickly with one ramekin at a time. Sprinkle each individual ramekin with sugar and caramelize it immediately with your kitchen torch before moving on to the next. If the sugar sits too long on the yogurt mixture, the moisture from the yogurt can be drawn out, which might prevent the sugar from caramelizing properly and achieving that desired crispness.

Tips for Perfecting Your Yogurt Brulée

Achieving that iconic crackable sugar crust is key to a fantastic brulée. Here are a few extra tips to ensure your Strawberry Yogurt Brulée turns out perfectly every time:

  • Choose the Right Yogurt: Whole-fat yogurt, whether Greek or regular, provides the best creamy base. Greek yogurt will be thicker and richer, offering a denser texture, while regular whole-fat yogurt will be a bit lighter. Avoid low-fat or fat-free yogurts, as they tend to be too watery and might not hold up as well under the heat of the torch, potentially affecting the caramelization process.
  • Macerate for Flavor: Don’t skip the step of combining strawberries with a little sugar and letting them sit. This process, known as maceration, draws out the natural juices from the strawberries, intensifying their flavor and creating a luscious, slightly syrupy element that mingles beautifully with the yogurt.
  • The Kitchen Torch is Your Best Friend: While some recipes suggest oven broiler methods, a kitchen torch offers the most control for caramelizing the sugar. It allows you to create an even, crisp crust without heating the yogurt mixture underneath too much. If you don’t own one, it’s a worthy investment for any dessert enthusiast.
  • Even Sugar Distribution: Sprinkle the granulated sugar evenly over the surface of the yogurt. A uniform layer of sugar ensures a consistent caramelization and prevents burnt spots or areas where the sugar hasn’t fully melted.
  • Work Quickly and Individually: As noted in the recipe, caramelize one ramekin at a time. The moisture from the yogurt can start to dissolve the sugar if it sits too long, making it harder to achieve a crisp topping. Speed is your ally here!
  • Serve Immediately: For the ultimate experience, serve the brulées right after caramelizing. The contrast between the warm, crisp sugar and the cool, creamy fruit and yogurt is truly magical. Over time, the caramelized sugar can start to soften due to moisture from the yogurt.

Creative Variations & Serving Suggestions

While the classic Strawberry Yogurt Brulée is perfect as is, it’s also incredibly adaptable. Feel free to experiment and make it your own!

  • Fruit Swaps: Not a fan of strawberries, or simply want to try something new? This recipe works wonderfully with other berries like raspberries, blueberries, or a mixed berry medley. Sliced peaches, nectarines, or even a tropical mango could also be delightful additions. For an autumn twist, consider thinly sliced apples or pears with a pinch of cinnamon.
  • Add a Flavor Boost: Stir a teaspoon of vanilla extract, almond extract, or a pinch of cardamom into the yogurt for an extra layer of flavor. A small amount of lemon zest can also brighten the mixture.
  • Textural Additions: Before serving or after caramelizing (depending on preference), sprinkle with a little granola for extra crunch, toasted nuts like slivered almonds or chopped pistachios, or shredded coconut.
  • Make it a Parfait: For a layered dessert or breakfast, alternate layers of the yogurt-fruit mixture with granola in a tall glass before adding the sugar and torching the top layer.
  • Presentation Matters: Garnish with a fresh mint sprig, an extra slice of strawberry, or a few whole berries on the side to enhance its visual appeal.
