And now, for the most joyous news, which I’ve saved for last: I’m pregnant! My husband and I are absolutely over-the-moon excited to announce that we are expecting our first child this spring. However, I must confess, this incredible journey has had a somewhat unexpected side effect on my usual bustling kitchen routine. Ingredients

 

Almond quick bread:

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • cup granulated sugar
  • 3 teaspoons baking powder
  • 1 large eggs
  • 3 tablespoons unsalted butter , melted
  • 1 ½ cup milk
  • 2 teaspoons almond extract
  • ½ cup plus 2 tablespoons sliced almonds

Caramel Pear Butter:

  • 7 pounds pears , cored and sliced
  • ¼ cup lemon juice
  • 1 ½ cup packed light or dark brown sugar
  • 1 vanilla bean
  • ½ teaspoon salt

Instructions

 

To make the bread:

  • Preheat oven to 350°F (175°C). Grease and flour a 9 x 5 inch loaf pan.
  • Spread ½ cup of the sliced almonds on a sheet pan and toast in the oven until just starting to turn golden brown, about 2 minutes. Keep a close eye on them to prevent burning. Set aside to cool.
  • In a large mixing bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, and baking powder. In a separate bowl, combine the milk, melted butter, egg, and almond extract. Pour the wet ingredients into the dry ingredients and mix until just combined (the batter will be thick). Gently fold in the toasted almonds.
  • Spread the batter evenly into the prepared loaf pan and sprinkle with the remaining 2 tablespoons of sliced almonds for a beautiful topping. Bake until a toothpick inserted into the center comes out clean, about 35-40 minutes. Cool on a wire rack before slicing.

To make the pear butter:

  • Put the cored and sliced pears and lemon juice in a large saucepan or stock pot over medium-high heat. Allow the pears to release their juices and come to a boil. Reduce heat to low and simmer until pears are very soft and tender, about 20 minutes.
  • Pass the softened pears through a food mill to achieve a smooth puree and remove the skins, or blend them in a food processor until smooth and then pass through a fine-mesh strainer if a food mill is unavailable. Return the pureed pears to the pot and add the brown sugar, vanilla bean, and salt. Return to a boil, stirring constantly to dissolve the sugar completely. Reduce heat to low and let simmer gently until the pear butter is significantly thickened and reduced, and the mixture has transformed into a rich, golden brown color. Stir every few minutes to prevent the bottom from burning. This simmering process can take some time, so be patient for the best results. Remove the vanilla bean pod before serving or storing.
  • Pour the hot pear butter into prepared jars for canning (following proper canning procedures), or into a clean, airtight plastic container for refrigeration or freezing. Pear butter will keep beautifully in the fridge for a few weeks, in the freezer for a few months, or preserved in properly sealed jars for up to a year.
