Ingredients

 

  • Vegetable oil , for frying
  • 2 cups cake flour (240 grams)
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • 2 large egg yolks
  • 2 cups ice cold water (500 ml)
  • 1 head cauliflower , cut into florets

Dipping sauce:

  • cup plain Greek yogurt (75 grams)
  • cup mayonnaise , or replace with more yogurt (75 grams)
  • ½ teaspoon chopped fresh cilantro
  • ½ teaspoon chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • Salt and pepper , to taste
  • 3-4 tablespoons  olive oil

Instructions

 

  • Pour oil into a heavy-bottomed pot so that it’s at least 2 inches deep. Insert deep fry thermometer. Set over medium high heat and heat to 350 degrees F. This precise temperature is crucial for achieving that perfect golden crisp without burning the batter or leaving the cauliflower undercooked.
  • Meanwhile, prepare the tempura batter. It’s best to have the batter ready right as the oil reaches its optimal temperature to prevent it from sitting too long, which can diminish its airy quality.
  • In a large bowl, combine the cake flour, salt, and cumin. In a separate bowl, whisk together the egg yolks and ice-cold water until just combined. Gradually add the wet ingredients to the dry flour mixture. Mix gently with a fork or chopsticks just until no streaks of dry flour remain; the batter should still be noticeably lumpy. Overmixing will develop the gluten, leading to a tough, rather than crispy, coating.
  • Carefully dip a few cauliflower florets at a time into the batter, ensuring they are lightly coated. Immediately transfer them to the hot oil, being careful not to overcrowd the pot. Cook for approximately 2 minutes on each side, or until they turn a beautiful golden brown and are visibly crispy. Keep a close eye on them to prevent burning. Use a slotted spoon or a mesh strainer to remove the fried cauliflower and transfer them to a plate lined with paper towels to drain any excess oil. Repeat this process with the remaining cauliflower florets.
  • Serve the crispy tempura cauliflower immediately while hot, alongside your freshly prepared spiced yogurt dipping sauce or any other desired accompaniment.

Dipping sauce:

  • In a medium bowl, whisk together the Greek yogurt, mayonnaise, chopped fresh parsley, chopped fresh cilantro, fresh lemon juice, ground cumin, and cayenne pepper. Season with salt and pepper to taste. Mix well until all ingredients are thoroughly combined and the sauce is smooth. Taste and adjust seasonings as needed, adding more lemon juice for tanginess, cayenne for heat, or olive oil for desired consistency. This dipping sauce can be prepared several days in advance and stored in an airtight container in the refrigerator, allowing the flavors to meld beautifully.

NOTE:

  • I highly recommend using a deep fry thermometer so you can accurately monitor the oil temperature. Maintaining a consistent 350°F (175°C) is key to evenly cooked, crispy tempura. If you don’t have one, you can test the oil’s readiness by dropping a tiny amount of batter into the hot oil. It’s ready when the batter quickly turns golden brown within about 20 seconds. If it browns too fast or burns, the oil is too hot; reduce the heat. If it sinks to the bottom and takes too long to color, the oil is not hot enough; increase the heat.
  • For the crispiest results, ensure your cauliflower florets are completely dry before dipping them in the batter. Excess moisture can lead to a less crispy coating and splattering oil.
  • Do not overcrowd the pot when frying. Frying in small batches helps maintain the oil temperature and ensures each floret cooks evenly and gets perfectly crispy.
  • For an even lighter batter, you can use sparkling water instead of regular ice water. The carbonation adds an extra boost of airiness to the tempura.
  • Feel free to experiment with other spices in the batter or dipping sauce. A pinch of garlic powder in the batter, or a touch of smoked paprika in the sauce, can add delightful variations.
