  • cup freshly squeezed lime juice (80 ml, from 2-3 limes)
  • Zest of 2 limes

  • In a blender, food processor, or juicer, puree the watermelon chunks until smooth. Pass the watermelon puree through a fine-mesh strainer into a large bowl or pitcher to remove any seeds and pulp, ensuring a smooth juice.
  • In a small saucepan set over medium heat, combine the granulated sugar, freshly squeezed lime juice, and lime zest. Heat the mixture gently, stirring occasionally, until all the sugar has completely dissolved and the syrup is smooth. Once melted, pass this lime syrup through a fine-mesh strainer to remove the lime zest, ensuring a clear and vibrant liquid. Let it cool slightly.
  • Combine the strained watermelon juice, the cooled lime syrup, and the water in a large bowl or pitcher. Stir well to fully incorporate all the ingredients. Taste and adjust sweetness if desired. Chill this mixture thoroughly in the refrigerator until it is very cold – this helps with the freezing process.
  • Pour the completely chilled mixture into a 9×13-inch (or similar sized, shallow metal) dish. Place the dish in the freezer. To achieve the signature granita texture, remove the dish from the freezer every 15-20 minutes. Using a fork, vigorously scrape and stir the frozen pieces from around the edges into the unfrozen liquid in the center. As you continue this process, the mixture will become more and more uniformly icy and granular.
