  • 2 cups milk (500 ml)
  • 15 oz whole milk ricotta cheese (425 grams)
  • 1 cup shredded Parmesan cheese (100 grams), divided
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon freshly grated nutmeg
  • 8 ounces lasagna noodles (227 grams), I used no-boil, oven-ready
  • 8 ounces mozzarella cheese (227 grams), shredded

  • Preheat your oven to 350 degrees F (175 degrees C). Take a 9×13-inch or similarly sized casserole dish and lightly grease it. This step helps prevent sticking and ensures easy serving.
  • In a large skillet, melt 2 tablespoons of the butter over medium heat. Add the sliced mushrooms and season them generously with salt and pepper. Cook, stirring occasionally, until the mushrooms have softened and released their moisture, which typically takes about 5 minutes. Next, add the fresh spinach and minced garlic to the skillet.
