  • 2 tablespoons unsalted butter (28 grams)
  • 3 medium apples , peeled and chopped
  • ½ teaspoon ground cinnamon
  • 2 tablespoons packed light or dark brown sugar

For the oatmeal:

  • 2 cups old-fashioned oats (not quick cooking) (200 grams)
  • cup packed light or dark brown sugar (37 grams)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup chopped pecans (57 grams)
  • 2 cups milk (475 ml)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

 

  • Preheat oven to 350° F (175° C). Grease an 8-inch (20 cm) square baking dish, or dish of similar size.
  • Place the butter, apples, cinnamon and brown sugar in a skillet and set over medium heat. Bring mixture to a boil, stirring occasionally to dissolve the sugar. Reduce heat to low and simmer until apples are tender, about 5 minutes. Remove from heat and set aside.
  • In a large bowl, combine the oats, brown sugar, baking powder, salt, cinnamon, nutmeg and pecans. In a separate bowl, whisk together the milk, egg and vanilla extract until well combined. Add the wet mixture to the oat mixture and stir until everything is thoroughly combined. Pour this mixture evenly into the prepared baking dish. Gently spoon the cooked apples on top of the oatmeal mixture.
  • Bake uncovered for 30-40 minutes, or until the top is golden brown and the oatmeal is set. Serve warm, optionally with additional milk or a drizzle of maple syrup, if desired. Store any leftovers in an airtight container in the fridge for up to 4-5 days.
